As you may know with endometriosis nutrition plays a very important role. This recipe is one of my favorites because of how moist and delicious it is. Sometimes we must compromise when it comes to food that contains lactose, gluten and sugar but this recipe is all made with good ingredients that allow you to enjoy it without regretting it later. I know, we have all been there! when the sugar craving hits, and we end up making a bad choice. This banana bread recipe can be your forever life saver and if you keep it in the fridge it is good up to a week.

Healthy Oat & Banana Vegan Bread
2 large very ripe bananas, mashed (plus one extra sliced in half for topping)
1/3 cup extra virgin olive oil
1/3 cup organic maple syrup
1/2 cup rolled oats (plus extra for topping)
1 3/4 cup oats flour
2 flax eggs = 4 tbs of milled flax seeds & 6 tbs of water (let sit for 10 min in the fridge before using)
1/4 cup Vegetable Milk
2 tsp baking powder
2 tsp cinnamon powder
1 tsp vanilla extract
Pinch of salt
Pre-heat oven to 160 degrees Celsius (320 Fahrenheit). In a bowl combine maple syrup and olive oil with a whisk. Add flax eggs, vegetable milk, and bananas and combine.
Add all remaining ingredients and combine well.
Pour batter into a baking paper-lined loaf pan.
Top with extra banana and oats.
Bake for 1 hour or until a skewer comes out clean (depends on your loaf tin size).
Cool in the tin for 15 minutes then turn out onto a cooling rack until it’s cool enough to be easily handled.
Slice, wrap and freeze! Or enjoy right away!
